Sonnel Hospitality appoints Opera Bar’s Fernando Sanchez as Group Head Chef

Sonnel Hospitality has appointed Fernando Sanchez as its new Group Head Chef, strengthening its culinary leadership as the group expands its hospitality-led footprint beyond Western Sydney.
Fernando has made the move to Sonnel from Opera Bar, where he was Executive Chef for the last five years. Prior to Opera Bar, he also oversaw the kitchens at House Canteen, The Clock in Surry Hills, the Marlborough Hotel in Newtown, and Aria Catering, working closely under Matt Moran’s ethos of championing local farmers and seasonal produce.
“Fernando’s experience speaks for itself and to have Fernando now leading our kitchens is a real win as we drive Sonnel’s culinary platform,” said Tim Fitzgerald, Chief Operating Officer at Sonnel Hospitality. “He has proven he can deliver at the highest level while keeping food fresh, uncomplicated, and approachable – exactly what we stand for. His leadership will be key as we take our food and beverage program to the next level across our growing portfolio,” said Jacqui Corbett, General Manager of Operations at Sonnel.
As Group Head Chef, Fernando will oversee the culinary direction of all Sonnel venues, mentor and build strong kitchen teams, strengthen supplier partnerships, and champion a produce-led approach to menus. His immediate focus will include the Crossroads Hotel in Casula, the Australian Hotel & Brewery in Rouse Hill, and Sonnel’s newest acquisition, the Firehouse Hotel in North Sydney.

Fernando’s appointment comes at a pivotal moment for Sonnel Hospitality. While Western Sydney remains its heartland, the group is extending its reach into new markets, with a series of significant hospitality venue developments in the inner west underway alongside future acquisition interest.
